The mysterious grapefruit

For many years it was thought that nootkatone was responsible for the taste and smell of grapefruit. In fact the real contributor to grapefruit flavor is the compound below. We can detect 2x10-5 parts per billion of this compound, i.e. 10-4 mg. per tonne. Put another way, a few drops in a fair sized lake could be tasted. Evolution does some strange things!
